About this plan

This is a straightforward week of North Indian vegetarian cooking: a dal or bean curry at the centre of most lunches, a dry sabzi with roti for most dinners, and paratha or chilla mornings that hold you until lunch.

Nothing here needs a special trip to a speciality shop. Rajma, chole, paneer, seasonal vegetables and the standard masala box cover almost the entire week, which is what keeps the grocery bill and the decision-making low.

Quantities in the grocery list are written for a family of four. Halve them for a couple — the plan itself does not change.

Questions about this plan

Do I need to soak anything the night before?
Yes — rajma for Monday and Friday, and chole for Tuesday and Saturday. Soak them the previous night for at least eight hours, or use a pressure cooker with a longer whistle count if you forget.
Can I make this plan vegan?
Mostly. Swap paneer for firm tofu, curd for a plant-based yogurt, and cook with oil in place of ghee. Kadhi chawal is the one dish that needs replacing outright — a besan-thickened tomato curry works well in its place.
How much does this week cost?
