A Bengali week has a shape that other Indian weeks do not. Lunch is the large meal, it is built on rice, and it moves through courses — something bitter first, then dal, then a vegetable, then fish. This plan keeps that order rather than flattening it into "one curry and one sabzi".
Fish appears four times, which is normal rather than indulgent: jhol twice with everyday rohu or katla, a paturi on Saturday, and prawns in a malai curry on Thursday. Wednesday and Sunday bring chicken and mutton, and the vegetarian days lean on posto, shukto, dhokar dalna and chholar dal.
Mustard oil and panch phoron do most of the identifying work here, so do not substitute them. Grocery quantities are for a family of four.
