About this plan

South Indian vegetarian cooking is unusually well suited to weekly planning because so much of it is built on two things prepared in advance: a fermented batter and a pot of sambar. Once those exist, idli, dosa, uttapam, set dosa and sambar rice are all short jobs.

The week moves through the region rather than staying in one kitchen — pesarattu and puliyodarai from Andhra and Tamil Nadu, bisi bele bath and ragi mudde from Karnataka, appam and idiyappam with stew from Kerala.

Grocery quantities are for a family of four. If you buy ready batter instead of grinding your own, drop the idli rice and most of the urad dal from the list.

Questions about this plan

Do I have to grind my own batter?
No. Ready idli–dosa batter works for Monday, Wednesday, Thursday, Friday and Saturday, and buying it removes the two overnight grind-and-ferment cycles. If you do grind, start soaking Sunday evening and Wednesday evening.
Is this plan gluten-free?
Almost entirely. Rice, urad dal, ragi and semolina-free dishes make up most of the week. The two exceptions are Friday breakfast poori and Monday dinner rava dosa — both swap easily for idli or plain dosa.
What is the minimum I need to prep in advance?
Sambar base on Sunday, tamarind extract for puliyodarai, and either bought or ground batter. That is enough for the week to run without any weekday morning taking more than 20 minutes.
